A lesson in making fresh pasta dedicated to one of the most famous dishes in Roman cuisine: pasta cacio e pepe. We will get our hands dirty and discover the secrets of this simple but delicious recipe, made with just a few quality ingredients: pasta, Pecorino Romano cheese, and black pepper. We will learn tricks and tips for achieving a perfect, velvety, and flavorful cream. The experience will be accompanied by a glass of selected white wine, allowing you to fully savor Roman tradition in a convivial and enjoyable atmosphere. Dessert is always a must in our home... We had the BEST time with Marco and Michela! They were so welcoming and kind, and it was fun to see a different side of Rome than most tourists see. It was a blast making dinnet with them, and their easy to follow instructions and tools made us feel like master chefs, Dinner turned out fantastic (if I do say so myself!) and we have a great dinner sitting on their balcony enjoying the weather. Their place is a little off the beaten path but completely accessible by metro or taxi. In fact, on our taxi ride home, we got some cool photos of monuments we’d have never come across otherwise! This was the highlight of our trip, and we can’t recommend them enough!

This night alone made our trip to Italy everything we had hoped for! From the moment we were greeted with champagne and Italian snacks, Marco’s cooking class felt like being welcomed into an Italian home with friends. Marco’s skill made cacio e pepe feel like an art form, yet simple enough to recreate, and having his wife Ida (an expert guide) share hidden gems of Rome was the icing on the cake. We laughed, we shared stories, and even got to taste Ida’s family’s 1969 liqueur as our free flowing conversations took us later into the evening than planned. It was magical and completely unforgettable, so much so, we’re already planning our return for carbonara!! Thank you both so much for the Italian experience we always dreamed of having!
