Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina
During this cooking class, which will take place in my home in Florence, we will learn how to prepare coccoli: fried bread dough, which we will then fill with cheese and cured meats.
We'll continue with the lampredotto sandwich, a traditional Florentine street food. Originally considered a humble dish, it was created as a way to use parts of the animal that were usually discarded — known as the “fifth quarter.” But I assure you, it’s absolutely delicious! It will be served with two sauces (a green one and a slightly spicy one), both of which we’ll make together. We'll also sample trippa alla fiorentina, both in a salad version and stewed in tomato sauce. To finish, we’ll prepare a classic dessert from our culinary tradition: tiramisu. Everything will be accompanied by a glass of red wine.

- We had a very enjoyable cooking class with Donatella learning to make pasta and tiramasu from scratch and to eat the fruits of our labor for lunch. We also had the opportunity to go visit the local vegetable, fish, meat and bread market to get a true sense of the neighborhood. Donatella was very friendly, informative and encouraging. We had a great time! My only recommendation to enhance the experience further is to include water and some soft background music. Also having a sign with the party's last name would have helped us locate her sooner. Otherwise, an extremely enjoyable experience. Grazie mille to Donatella!
