Arancina is the Queen of Palermo Street Food. It is a ball of rice, filled with a tasty filling of meat or cheese, breaded and fried in abundant oil.
During this experience you will learn all the secrets to preparing fantastic arancine, following the recipe my grandma handed me down. I will show you the most suitable rice and its particular cooking method to remain 'al dente' but at the same time very compact, the preparation of the filling with ragout and pieces of cheese or with bechamel, ham and cheese (my favourite), up to the breading. I also offer vegetarian variations. At the end of the preparation we will sit at the table to taste the fruit of our work together with some good local wine or beer.

Evethibg was prepared and we could check all the steps of preparing Arachine. All the ingredients were high quality. Their place and the neighbourhood was amazing. We kept in rouch to see if we can absolve the training.
- Our family had a private lunchtime cooking class with Alice and Francesco and we all agree that it was the highlight of our time in Palermo and something we will not forgot. Alice’s home is a sanctuary from the busy and hot streets of the city. We learnt how to make a delicious 3 course Sicilian meal using seasonal ingredients and cannot wait to try out the recipes again ourselves. I highly recommend Alice and Francesco’s cooking classes!!

I love cooking for my family and for others, starting from the choice of recipes and the selection of ingredients. I like to experiment and I'm particularly passionate about pastry and leavened foods. I do research on ancient cookbooks and asking around, especially older ladies, their family recipes. Sicily, like all Italy, has an invaluable gastronomic heritage, whose recipes and preparations vary from house to house, not only between cities and provinces. This gives the palate the opportunity to enjoy the same traditional dishes with different ingredients, techniques and stories."
