We begin this experience with my family's fruit aperitif, accompanied by appetizers made with local breads, cheeses and cured meats from local producers.
For fresh pasta, we will explore different flours: from refined type 00 flour to those with more intense and distinctive flavors. One of the flours we will use is spelt flour, typical of Tuscany, known for its robust flavor, crispness and quick cooking. We will prepare fresh pasta accompanied by a tasty seasonal sauce. Then gnudi, a traditional dish made with excellent shepherd's ricotta, spinach and various herbs, with the classic butter and sage sauce. For dessert tiramisu, or a typical traditional dessert. We will taste the dishes accompanied by an excellent prosecco from a local producer.

- Monica was a wonderful host and teacher! She was very informative and funny, making us feel very welcome into her home. Monica was always checking in with us to make sure everything was good within the experience. All of the food was so good and we greatly appreciated being able to share our creation with our family. I would absolutely recommend this experience with Monica!

- Monica was a last minute switch for us as our original chef became sick the day before our class. We couldn’t have asked for a better teacher and guide to Italian cuisine. We took this class while on our honeymoon, and it was one of our favorite experiences during our three weeks in Italy. She and her husband were both incredibly warm and inviting, and made us feel like part of their family. We felt that we got much more than just a cooking class, but also an introduction and welcome into Italian culture. We will absolutely be returning when we come back to Italy.
