Starting from the basic ingredients, we will begin by making the different doughs: for crescentine, for the crostata, and for the tortelloni, which we will let rest. Next, we will prepare the fillings for the tortelloni and the pesto for the crescentine. We will roll out the pasta, shape the tortelloni, and prepare and bake the crostata. For the vegetarian menu, the tortelloni will be filled with ricotta and spinach, while the crescentine (or tigelle) will be served with cheeses and traditional sauces.
