During the course we will discuss the various types of flour used for pasta: the differences between soft and hard wheat, and the importance of using a quality flour over classic 00 flour.

- Carlo hosted my family for a wonderful evening. He instructed us on cooking homemade pasta and tiramisu! We learned a lot about Italian cuisine throughout the evening and enjoyed every moment. I’d highly recommend Carlo for a class - great food, great host!
- We learned how to cook two types of pasta and tiramisu during the class. Carlo was very patient answering all those questions out of our curiosity. It was an interesting and unforgettable experience, especially for us since we had no experience making pasta ourselves. Making authentic handmade pasta may take more efforts than you thought :P Also had great casual talk with Carlo from cuisines to local lifestyle. Have to say the food we made together tasted very well. My wife and I would strongly recommend everyone to join Carlo's class during your Florence stay!
