I like to cook leavened products, with a particular focus on panettone, colomba and pizzas, all with mother yeast that I have been taking care of for two years.I also learned how to temper the chocolate and I prepare very sweet pistachio cremini which I then add to the panettone.I have Roman origins and my workhorse is the gricia!
