Hi from Monica!

I love preparing traditional first courses, with a special fondness for ravioli, which I fill with ever-changing and fragrant ingredients. I have a true passion for appetizers and side dishes made with seasonal vegetables: from vignarola to Roman-style artichokes, from chicory to fava bean purée, and from cardoons to legumes in all their variations. Homemade crostini with pâté are another of my specialties. And then there are the desserts, my first great love: tarts with homemade sour cherry jam, cookies, cakes with seasonal fruit, chocolate caprese, apple and amaretto cake, and much more. I always choose top-quality ingredients because, for me, the pleasure of cooking begins at the market, where I start to imagine and savor the dish that will come to life.
