I'm in the beautiful setting of Cetara to show you how to prepare a 3 course menu with typical local ingredients and preparations.
You will learn how to make various types of long pasta, starting with the choice of raw materials, using a simple rolling pin. We will understand together when and why to use one type of pasta rather than another, and I will show you various general and local cooking and stirring techniques. We will clean together the necessary fish going to observe and discover those rules that will allow us to move correctly even at the sight of new ingredients and we will also observe how to ascertain their correct cooking, and finally we will familiarize ourselves with the dough for dessert. It will also be fun then to sit at the table and taste noticing all the tricks.
