I'm in the beautiful setting of Cetara to show you how to prepare a 3 course menu with typical local ingredients and preparations.
You will learn how to make various types of long pasta, starting with the choice of raw materials, using a simple rolling pin. We will understand together when and why to use one type of pasta rather than another, and I will show you various general and local cooking and stirring techniques. We will clean together the necessary fish going to observe and discover those rules that will allow us to move correctly even at the sight of new ingredients and we will also observe how to ascertain their correct cooking, and finally we will familiarize ourselves with the dough for dessert. It will also be fun then to sit at the table and taste noticing all the tricks.

- Marco was an excellent teacher! I learned how to make gnocchi and yellow pasta. I also learned about the use of rice flour instead of regular flour as well as a number of ways to make things easier when making pasta and pasta sauce. I liked the chance to try my hand at some of the things we did like making gnocchi as the experience will be helpful when I try it at home. The antipasto was tasty and very easy as was the tira misu that we also made. A wonderful experience. The only thing I might suggest is to have a printed copy of the recipes available as well. If you enjoy cooking, you will enjoy a session with Marco.
