The Cima is in pocket of veal , stuffed with egg , ham, peas , parmesan cheese, pine nuts and marjoram. In cooking it by boiling it creates a magic of intense and delicate flavors , in fact it is considered a lean dish, or incredibly mouthwatering if you fry it.
