Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

Claudia’s home is situated in the rolling hills of Zagarolo, just a few kilometres from Rome, in an area rich in history and nature. Surrounded by olive trees, a small vineyard and fields teeming with wild herbs, her cooking stems from a deep connection with the land and its most authentic ingredients.

During the experience, we will prepare a menu inspired by wild herbs and the flavours of the Lazio countryside. We’ll start with wild vegetable fritters, followed by strozzapreti pasta served with crispy guanciale and black cabbage pesto. We’ll finish on a sweet note with a delicate custard served with crispy puff pastry and rosehip sauce. A convivial experience blending nature, tradition and seasonal cuisine, to be savoured at a leisurely pace.
