    Fancy an authentic experience centred around traditional Italian cuisine? Come and visit us: Giorgio and I will welcome you into our home, in a historic Roman building, with a prosecco aperitif and a platter of selected cold cuts and cheeses, before we get cooking together. We’ll prepare ricotta and spinach ravioli, tagliatelle with Grandma’s ragù, and the ever-present tiramisu. In a warm, family atmosphere, we’ll share laughter, a passion for good food, and time-honoured, handmade recipes. And finally, the moment you’ve all been waiting for: we’ll taste your creations, accompanied by excellent wine and plenty of conviviality.

    My mom and I spent our last night in Rome with Maria and Giorgio, and it turned out to be one of the most memorable experiences of our entire trip. From the moment we arrived, Maria, her husband Giorgio, and their friends Isabella and Meriem made us feel genuinely welcomed, not like tourists, but like guests in their home. The pasta-making class itself was wonderful. We made three types of pasta, and Maria was an exceptional teacher throughout, patient, hands-on, and always thoughtful about explaining the why behind each step, not just the technique. Even as complete beginners, we felt confident and had a great time throughout. The meal that followed was something special. We were treated to a beautiful spread of antipasti in honor of Labor Day, including fava beans and pecorino cheese, along with artichokes, meatballs, fresh bread, pastries, and more. Everything was delicious and incredibly generous. What truly set this experience apart, though, was the warmth of the conversation. Isabella and Meriem graciously helped with translation where needed, and the conversation flowed naturally and openly from the start. We met each other with genuine curiosity and left feeling like the evening had been as much about real human connection as it was about food. At the end of the night, they even called a cab for us and waited with us until it arrived. That kind of hospitality is rare. Maria is a gem and her home is beautiful. I would recommend this experience to absolutely anyone visiting Rome.

    We were guests of Mrs. Maria for a cooking lesson that turned into a wonderful convivial gathering. Welcomed by her and her son, we tried our hand at making fresh pasta, immersed in stories of Abruzzo traditions. But the real surprise was dinner. Once at the table, joined also by Mrs. Maria’s husband, an unforgettable feast began: a succession of appetizers chosen from local delicacies and their own homemade products, amidst chatter and laughter. What a satisfaction to eat the pasta made with our own hands, seasoned with an excellent tomato sauce! We ended on a high note with a delicious dessert prepared by Maria. But beyond the excellent quality of the ingredients, what struck us most was the atmosphere: thanks to the warmth of Maria and her family, we truly felt at home. A rare welcome that makes this experience unique!

    I love preparing first courses with homemade pasta, such as maccheroni alla chitarra, ravioli, and lasagna, along with risottos and dried pasta dishes featuring mushrooms and various vegetables. I have happily experimented with many dishes from Abruzzese cuisine, including ndurciullune, pallotte cacio e ova, and stuffed rabbit. Additionally, whenever I have the chance, I enjoy being inspired by the typical cuisines of Tuscany and Lazio.
