In Tuscany many traditional dishes are vegetarian or vegan. In this cooking class we will make gnudi, a vegetarian first course, made with the filling of ravioli, typical of Sunday lunches, and malfatti al ragù finto, a completely vegan first course made with a peasant vegetable ragout. We will complete our experience with a mouthwatering tiramisu, made with the family recipe. We will then enjoy what we made in my garden at sunset time, a special moment thanks to the view that surrounds my house. Dogs are welcome, they will keep my Tosca company!

I also make vegan dishes, but the traditional ones that you wouldn't expect to be vegan. My cooking is rustic and simple, with an eye on sustainability. Additionally, I make pantry cakes and traditional sweet leavened baked goods.
