My childhood memory . My mother who recently passed away was Neapolitan . I created this experience in her memory .

Tortano is a savory pie with cold cuts and cheese and was always made in our house to empty the fridge . There was no Sunday without gnocchi and meatballs with sauce . Gnocchi were made by mom even when there was nothing in the fridge , I remember her boiling two potatoes that she mixed with a little flour and put a delicious dish on the table . To finish the baba typical Neapolitan sweet soaked with rum , we children were allowed to eat it even with the presence of the liqueur

We LOVED this cooking class with Rosa - she was very friendly, welcoming & knowledgeable. She is generous with her time, patient with questions & good company. We shared lunch with her family swapping stories which was lovely - it was also my birthday so I got candles & a happy birthday song to top it all off! Would definitely recommend to others. The pasta cooking class was a fun, very authentic experience high above the rooftops of Palermo. Rosa Maria and Celia are very friendly, the view is wonderful and the pasta is delicious.

We had a lovely time cooking with Rosa Maria and eating dinner with her family. We were just 3 and cooked in her kitchen. We made Tiramisu and 2 types of pasta by hand. One small suggestion: while we made the pasta's and the pesto, there were other elements added to the final dishes and we weren't really involved in that. It would have been nice to be part of how it all came together. The meal itself was one of the best we had on our 2 week Italian vacation! We plan to make Pasta alla Norma this weekend at home!
