- Arancina
Arancina is the Queen of Palermo Street Food. It is a ball of rice, filled with a tasty filling of meat or cheese, breaded and fried in abundant oil.
During this experience you will learn all the secrets to preparing fantastic arancine, following the recipe my grandma handed me down. I will show you the most suitable rice and its particular cooking method to remain 'al dente' but at the same time very compact, the preparation of the filling with ragout and pieces of cheese or with bechamel, ham and cheese (my favourite), up to the breading. I also offer vegetarian variations. At the end of the preparation we will sit at the table to taste the fruit of our work together with some good local wine or beer.

- We loved our class on the Italian Aperitivo and Spritz. Alice shared unique and personal recipes with great ingredients. It was fun, informative and everything was delicious. Wonderful hosts - would recommend to everyone
- We can definitely recommend this cooking class to everyone! We had a really great evening with Alice and Francesco. Alice showed us many different types/shapes of pasta and shared really helpful tips and background information for the making of pasta. We also prepared a delicious tiramisu. As a vegetarian it was no problem at all and Alice checked our likes/dislikes with us in advance. After we made the pasta Alice and Francesco cooked for us as we had really nice starters and wine. The food was delicious. We had a lot of fun, shared great laughter and had a really nice and delicious dinner and local recommendations for our trip in Sicily. If we ever visit Palermo again we will come back for another cooking experience with Alice.
- We had such a fantastic time at this cooking class with Alice and Francesco! From the moment we arrived, they made us feel so welcome in their beautiful home. The whole experience was warm, relaxed, and so much fun – full of laughter, great conversation, and of course incredible food. Alice is a wonderful teacher, making everything easy to follow while still feeling authentic and special. We absolutely loved learning how to make fresh pasta and the delicious almond parfait – such a treat! It was definitely a highlight of our trip to Sicily. It truly felt like spending an evening with friends rather than just a class. We left with amazing memories (and delicious recipes to try at home!). I would highly, highly recommend this experience to anyone visiting – it’s an absolute must!
- This booking was truly one of the most memorable events of our trip. First, we learned so much from Alice as we shopped the vegetable and fish market. But the best part was the way both she and Francesco welcomed us into their home. We prepared the meal, ate, talked family traditions and laughed for more than the scheduled four hours. By the time we were leaving we felt like family. I highly recommend booking with Cesarina Alice!!

I love cooking for my family and for others, starting from the choice of recipes and the selection of ingredients. I like to experiment and I'm particularly passionate about pastry and leavened foods. I do research on ancient cookbooks and asking around, especially older ladies, their family recipes. Sicily, like all Italy, has an invaluable gastronomic heritage, whose recipes and preparations vary from house to house, not only between cities and provinces. This gives the palate the opportunity to enjoy the same traditional dishes with different ingredients, techniques and stories.
