I will welcome you to my home on Via degli Orti, in the heart of Bologna, with a glass of wine. Together we will prepare everything from scratch, just as in the tradition of true Bolognese sfogline.

We will make three types of fresh pasta: ricotta and spinach ravioli, pappardelle topped with a rich vegetarian ragù, and stricchetti with fresh tomato sauce. We’ll finish with a delicious homemade vegan tiramisu.

During the cooking class, I’ll guide you step by step, sharing techniques, traditions and secrets of Italian fresh pasta. After cooking, we’ll enjoy everything we’ve prepared together, accompanied by a good bottle of local wine and a coffee.

The setting in a real local home made it feel so authentic and gave the whole experience a very different feel from a typical cooking class. Traditional Italian first courses are my greatest love: I prepare them with care, pairing them with rich, fragrant sauces built on simple ingredients and plenty of time. And it never ends without something sweet: from the great classics to my lighter variations, because a meal without a little sweetness at the end isn't really complete.
