My cooking always starts with handmade pasta — that slow, precise gesture of rolling out the dough, choosing the right shape, feeling the mixture come to life between your fingers. Traditional Italian first courses are my greatest love: I prepare them with care, pairing them with rich, fragrant sauces built on simple ingredients and plenty of time. And it never ends without something sweet: from the great classics to my lighter variations, because a meal without a little sweetness at the end isn't really complete.

Olga was delightful and is an amazing cook and baker. She spent extra time with me and we enjoyed chatting about our pets. She showed me a lot of techniques for managing the pasta dough. The stuffed pappardelle with tomato sauce was the best I've ever eaten and the Bolognese ravioli was delicious. If I am back in Bologna, I will certainly take another class with Olga.

What a delight Olga was, she welcomed me into her home and showed me her techniques for making a number of different pastas and sauces, we shared some drinks and great conversation then sat and enjoyed a meal together we had made from scratch. A truly lovely experience that has given me the knowledge to enjoy cooking fresh pasta with my family, her skills will be passed down through my family and enjoyed by many!
