Hi from Rosa!

I live on the outskirts of Bologna, surrounded by greenery, together with my two cats, Tony and Gino, whose playful personalities always keep the house full of life. I am a lawyer by profession, but I have always loved cooking and the culinary traditions of Bologna, which are an important part of my life. In my free time, I enjoy preparing the classic dishes of our cuisine, sometimes adding a personal touch, and sharing these moments with friends and guests in a warm and authentic atmosphere.

Stare a casa di Rosa è stato come stare a casa mia: lo stesso calore, la stessa accoglienza. Con una pazienza infinita mi ha insegnato a fare i tortellini, spiegandomi ogni gesto più e più volte, finché non ci sono riuscita. Rosa non insegna solo a cucinare: ti trasmette l’amore per la tradizione, dal brodo ai piccoli segreti che fanno la differenza. È stata un’esperienza bellissima, autentica, che porterò con me. Grazie Rosa, davvero.

Abbiamo passato una mattinata indimenticabile insieme a Rosa, che ci ha fatti sentire da subito a nostro agio. Appena entrati, ci hanno accolto i suoi gattini ed il profumo della moka appena fatta. Dopo due chiacchiere, abbiamo subito messo le mani in pasta e, grazie alla guida esperta di Rosa, abbiamo eseguito tutti i passaggi per ottenere tortellini e tortelloni. Rosa ci ha anche offerto un ottimo aperitivo emiliano e ci ha raccontato la sua storia e la sua esperienza da Cesarina, oltre a tutti i suoi segreti per la preparazione della pasta fresca. E poi finalmente abbiamo assaggiato i tortelli fatti con le nostre mani: che soddisfazione! Riproveremo sicuramente a ripetere a casa, anche se non sarà lo stesso senza Rosa, che è stata davvero gentilissima e disponibilissima!

We attended a class with Rosa today, and it was absolutely wonderful! We highly recommend taking a class with her. Great chefs aren’t always great teachers, but with Rosa everything was both delicious and clearly explained. The atmosphere was fantastic, full of humor. We learned so much and enjoyed every moment. I’ll also add that we requested a vegetarian class, and not for a second did we feel that it took away from the experience.

We had a wonderful time cooking at Rosa’s. My friend and I learned how to make three kinds of pasta, and Rosa walked us through every step. She is so warm and helpful, a terrific teacher and host. Her kitchen was large and well equipped. While the pasta “rested” before being rolled out, she opened wine and made us a snack of mini pizzas. Delightful! Our final results were delicious as well. Tagliatelle with ragu, tortoloni with ricotta and parsley, and small button pasta filled with shrimp. Delicious and fun! I suggest having your class early in your trip, as Rosa has lots of great restaurants and sites to recommend. The class with her was really special.
