I love my kitchen both as a space and as a working environment. I enjoy getting my hands in the dough to make pasta, including thin sheets and shortcrust pastry. Being Tuscan, my cuisine is a blend of Tuscan and Emiliana traditions. From the typical lasagna and tagliatelle to the classic Tuscan pappa al pomodoro, my kitchen represents a fusion of these regional influences. The journey through traditional flavors continues with favorites like tiramisu and the iconic Prato biscuits, perfect for dipping into Vin Santo. My kitchen reflects my passion for tradition and the joy of sharing these gastronomic pleasures with others.

I have to admit we had high expectations for the evening's cooking class. We were looking forward to making pasta and ragu, Bolognese style. The evening more than met our expectations. As soon as we walked into the house and were welcomed warmly by Roberta and saw her lovely house and her very well-equipped kitchen, we knew we were in for a great experience. Roberta was very engaging, and we had discussions about my wife's Italian heritage and cooking skills as we started to work on the ragu for our dinner. Robert explained step by step what we were doing, and as soon as the first bit of pancetta was sauteing in the pan, the smells were fantastic. As we were beginning to get ready to make our pasta, Roberta invited us to also make our dessert, our individual tiramisu, which was a welcome surprise. Roberta was very patient with us as we were kneading the dough for the pasta, and it came out perfect. Soon enough, the ragu was ready, and we had made our tiramisu and put them into the refrigerator. We were ready to eat our meal. Roberta has set a wonderful table, and for our appetizer was her own recipe, Mortadella mousse, which was delicious. We then proceeded to eat our pasta bolognese with some local Lambrusco, and to top it off, tiramisu. Roberta is a wonderful cook, a great teacher, and an exquisite host. We will certainly come back to visit and learn to cook another meal next time we are in Bologna.

Roberta's gelato-making class was the absolute highlight of our trip to Bologna! Roberta is a joy - a lovely, kind person with a passion for food and gelato! Her home is gorgeous and we felt like we were her special guests as well as students. We learned each step of the process and then ate the gelato - which was incredibly delicious! We sat in her sunlit kitchen, eating the best gelato plus sorbet plus wine and fresh strawberries and finished off with affogatos. Roberta is an experienced chef and we would gladly take any class that she has to offer. We rate her class as high as possible!

We’d appreciate anything you can send including the pasta, ravioli filling, tomato sauce, appetizer, etc. and anything else! It was all so delicious we’d like to try some at home.
