My cuisine revolves mainly around traditional dishes from Emilia-Romagna, a region rich in culinary traditions. I love working with fresh and genuine ingredients, creating dishes that celebrate the authenticity and flavors of this land. One of my passions is teaching the art of making fresh pasta dough. I enjoy sharing the secrets to achieving perfect fresh pasta. It's a process that requires patience and dedication, but the results are rewarding. During my classes, I will guide you step by step through traditional techniques, sharing tricks and tips to achieve light and flavorful pasta dough. In addition to pasta dough, I prepare a variety of Emilia-Romagna dishes, from tagliatelle with ragù to lasagna, from tortellini in broth to crescenta bolognese. Each dish has a story to tell and a tradition to preserve. I am excited to welcome you into my kitchen and share with you the joys of traditional Emilia-Romagna cuisine. I hope to inspire you to discover and appreciate the wonders of this region through taste and culinary experience. Susanna was professional and welcoming. Her English was also good, considering she had two international students. Fun, relaxing, a good mix of practice and tradition without overdoing it. The final tasting was superlative with good wine. My only advice: specify the address in large letters to avoid misunderstandings. Having her direct phone number would have solved our problem immediately.

Five stars aren't enough! Susanna took us by the hand – two 9-year-old children and their parents, who are “not very skilled” – and guided us from egg to flour to lunch with tortelli, tagliatelle, and strichetti made by us. She perfectly withstood the bombardment of questions, the energy of the children, the lack of skill of the adults, and even rewarded us with an excellent bottle of red wine. A wonderful experience that I would recommend to anyone, definitely to be repeated for different explorations, for example, to learn how to make tortellini. A huge thank you to Susanna and the wonderful institution of the Cesarine.

Susanna was fantastic. This experience was a gift to me and I really appreciated the kindness and warmth.
