    I am waiting for you for an authentic Bolognese experience among hills and tradition! After a welcome glass of wine, we will prepare together two types of fresh pasta pulled by hand with a rolling pin, as tradition dictates. The first is green puff pastry, which we will stuff with a delicious filling of mortadella, ricotta and Parmigiano to create the typical Balanzoni. The second is yellow egg pasta sheet, with which we will make classic tortelloni filled with ricotta and spinach. Once ready, we will bake them and enjoy them together with selected local wines in my home nestled in the green hills of Bologna. Who wants to learn the Bolognese tradition?

    This was the best lasagne I’ve ever had in my life! I’ve tried different Italian dishes in a few restaurants around Bologna before, but none of them impressed me as much as what we made during this class. Roberta led the lesson in such a warm and friendly way – she was kind, helpful, and you could really feel her passion for cooking. The whole experience was engaging and clearly explained from start to finish. If Roberta ever opened her own restaurant, I’d definitely be one of her regulars. I highly recommend this class to anyone who loves Italian food and wants to learn something truly special!
