I am waiting for you for an authentic Bolognese experience among hills and tradition! After a welcome glass of wine, we will prepare together two types of fresh pasta pulled by hand with a rolling pin, as tradition dictates. The first is green puff pastry, which we will stuff with a delicious filling of mortadella, ricotta and Parmigiano to create the typical Balanzoni. The second is yellow egg pasta sheet, with which we will make classic tortelloni filled with ricotta and spinach. Once ready, we will bake them and enjoy them together with selected local wines in my home nestled in the green hills of Bologna. Who wants to learn the Bolognese tradition?
Roberta and her cooking class were amazing! We made ravioli, tortelloni and tiramisu . Roberta was very knowledgeable, kind , patient, and very enthusiastic in teaching how to make pasta ! Her kitchen was amazing , everything was prepared and organized for us to start right away . It was wonderful to have the class in her beautiful kitchen and be able to enjoy eating our lunch that we made together in her beautiful dining area . She was very friendly and very hands on and helpful with instructions and methods .

Roberta was very welcoming! Her home and location of the cooking class was very beautiful. Everything was set up in her kitchen which was a culinary dream! My daughter (14yr) my aunt and I enjoyed learning to make tortelloni and ravioli and tiramisu. Roberta spoke English very well and was easy to follow with the cooking. All parts of the dish were hands on from pasta to filling of pasta and all dessert ingredients. The food was simple, yet incredible flavorful! We absolutely enjoyed our experience and would highly recommend Roberta’s class to anyone interested in traditional Italian pasta!

We loved our morning with Roberta. She is a very welcoming and gracious.. She really knows how to cook and how to teach others to cook. Her kitchen is beautiful. We made two different kinds of tortelloni, each absolutely delicious. It was a very relaxing hiatus in our trip. Though we spent only one morning together, we felt as though we were leaving a dear friend, and it was hard to leave !
