Small Group hands-on cooking class with 2 pasta recipes and tiramisù

After a welcoming prosecco, we will prepare the traditional pasta dough by hand with a rolling pin, creating tagliatelle and tortelloni from our local tradition. You will learn how to make ragù the way it has been done in my family for generations. Next, we will make ricotta and parsley tortelloni, seasoned with butter and sage. We will also take some time to prepare a vegetable-based sauce with seasonal ingredients to dress the tagliatelle for those who prefer vegetarian cuisine. To end our experience on a sweet note, we will make Italy’s beloved dessert, tiramisù. At the end of the lesson, we will enjoy the dishes we've prepared together.

I couldn’t have enjoyed my class with Federica more! A great teacher, she praised and encouraged my clumsy initial efforts, and soon we were laughing and discussing all things food, all things Bologna, and all things Bolognese food. She clearly values Bolognese culinary traditions, teaching them with skill and sharing them with contagious enthusiasm. After preparing the meal, it was a pleasure to enjoy it together in her lovely home. The restoration of paintings and frescoes is my profession, but my true passion is cooking. The attention to detail required in my work is the same precision I bring to my handmade pasta—tagliatelle, lasagne, tortellini, and tortelloni—all rigorously prepared with fresh dough rolled by hand using a rolling pin. My specialty is ragù alla Bolognese, while for main courses, I love preparing traditional dishes from my region, Emilia-Romagna, such as roasts and meatballs. Vegetables are always present on my table, often with a touch of Neapolitan influence, which also inspires me to prepare some delicious seafood dishes. The view from my home, just outside the center of Bologna and near the Portico di San Luca, is simply breathtaking—I look forward to welcoming you to admire it together!
