    Discover the real spaghetti Bolognese, a traditional dish that is not made with ragù, as often found in menus, but with tuna! A classic of Bolognese cuisine, alongside tortellini, tagliatelle, and lasagna, it features a base of onion and tomato, with the addition of tuna. In this course, I’ll reveal the secrets of this delicious recipe that my father used to prepare on festive days. During the two-hour experience, I’ll also guide you in making homemade gelato without the help of an ice cream maker. At the end, on the terrace, we’ll enjoy together the dishes we’ve prepared, paired with a nice glass of prosecco. A unique culinary experience you won’t want to miss!

    If you’re looking for an authentic way to see what it’s like to shop, cook and eat like a local this is the class you need to do!! Federica was an INCREDIBLE host. We met at the market did some shopping then she drove me back to her home, were everything was set up to start cooking. She had prepared an aperitivo so we popped open some Prosecco had some snack snacks and then got to cooking. Her kitchen was fully equipped with everything you needed to make these beautiful dishes. It was clean and organized allowing you to focus on the food and having a wonderful time. We cooked together and she was super informative. At the end, we sat down together, as if we had known each other for years (which it truly felt like), and enjoyed the beautiful meal we prepared together. Cannot recommend this enough for your next visit to Italy, especially in Bologna!!

    We are so greatful that we had this experience. First of all, we did get lost and were late to our class, but Federica was exceptionally understanding and accommodating. Without any hesitation from Federica, we were able to continue our experience. Her home was very beautiful and I loved how we were greeted and taken onto the picturesque terrace for a drink first. (I'm sure she could tell I was flustered for being late and needed a drink from our walk to her home). I was there with my sister and my son and she taught us how to make lasanga. We are from the United States and sad to say, we know very little italian, but she communicated easily with us. I felt very comfortable with her and understood her well. I loved making this memory with my family, and we have already said when we go back home we will make this again! Thanks to Federica, we will be able to share our pasta making skills at home. Thank you very much for your hospitality and knowledge so we can continue to share with our family!❤️

    Given Federica's professionalism and ease as a Cesarine, I was surprised to learn that she had just recently become part of the organization. And, I was honored to learn that I was her first client. We started with a market tour and a balsamic vinegar tasting. Then she welcomed me into her hilltop home, which featured a dramatic panoramic view of Bologna. We worked in her well stocked kitchen. A windowed wall let in lots of natural light from the adjacent plant-filled terrace while we rolled out pasta dough. Her passion and mastery in pasta making awed me. I'm not particularly adept with dough, but her clear instructions and helpful demonstrations improved my skills. We also made tiramisu (she adds a secret ingredient!), and two fresh pasta sauces using asparagus and artichokes. A fun, memorable, and delicious day.

    Beautiful experience. We were received by Federica who from the beginning was very patient with usand taught us alot about the art of making Pasta. First we had a wine tasting with an appetizer on the balcony overlooking the city. Next we learned how to prepare three types of pasta (tagliatelle, tortellini and garganella). To top it all off we enjoyed pasta with three variations of sauce always in the open air on the balcony of her beautiful apartment. The result was fabulous! I absolutely recommend!

    The restoration of paintings and frescoes is my profession, but my true passion is cooking. The attention to detail required in my work is the same precision I bring to my handmade pasta—tagliatelle, lasagne, tortellini, and tortelloni—all rigorously prepared with fresh dough rolled by hand using a rolling pin. My specialty is ragù alla Bolognese, while for main courses, I love preparing traditional dishes from my region, Emilia-Romagna, such as roasts and meatballs. Vegetables are always present on my table, often with a touch of Neapolitan influence, which also inspires me to prepare some delicious seafood dishes. The view from my home, just outside the center of Bologna and near the Portico di San Luca, is simply breathtaking—I look forward to welcoming you to admire it together!
