Panzerotto appeals to young and old alike, fried or baked. It has always been one of the most beloved Apulian street foods in the world. I will reveal the secrets of my dough, handed down from generations: tomato, mozzarella and fresh oregano, a volcano of happiness for your palates. We will prepare the classic panzerotto and have fun creating a variety of fillings with traditional Apulian ingredients, with a super stringy heart. Come and experience an unmistakable aroma and taste, Cesarina Piera is waiting for you!

We had such a fabulous experience learning how to make pasta with Pierangela! We made orecchiette, cavatelli and tiramisu and it was all delicious. It was such a lovely experience being in a locals home and learning how to make traditional, local dishes. Pierangela’s husband prepared some delicious bruschettas to have before our meal and we were joined by their friends and young daughter - such a fabulous experience. We can’t wait to show our friends back home our new pasta making skills. Would recommend anyone to do a cooking class with Pierangela :)

What an experience to be welcomed into Pierangela and Francesco’s home for a 1 on 1 pasta making class! We first made a tiramisu… and right to the pasta making! Orecchiette and cavateli…made by hand by us! Wow! We were even joined at one point by Piera’s adorable 2 year old, Alice in the pasta making! Piera prepared a selection of delicious bruschettas to start our supper, along with some beautiful Rose! Piera prepared to different sauces .. both incredible! She is a fabulous teacher. I would love to come back to Lecce and take more classes with her! It’s a day I will cherish forever!!

Pierangela was an excellent host and tutor. We felt so welcome in her home and amongst her family. We learned a lot and she took the time to explain the processes and recipes. It was a very memorable experience that we will cherish for a long time. Grazie di cuore, Pierangela!

We had an amazing cooking class with Pierangela. She taught us to make two different pastas and tiramisu, made some amazing appetizers for us, and was such a gracious host. It was the best food we ate during our entire trip to Italy. She and her husband were so welcoming and warm, it was lovely to be in their home for the evening. Our whole family had a great time. Thank you so much! We would recommend this experience to anyone!

We had such an amazing time! Pierangela was so welcoming it felt like going to a family's house. She even prepped apps for us which were amazing and made us a special coffee. We could not have been happier with the experience. She helped us enjoy cooking because neither of us are great haha. The sauces she prepared were my favorite and most flavorful out if our entire trip. Plus Maja (her beautiful dog) was a fun bonus 😄 Mahalo!!

Hello, my name is Pierangela, and cooking for others is one of the things that brings me the most joy. Since I was a child, I've wanted to experiment with the traditional recipes of my hometown. I was born in Gravina in Puglia, a town on the border between Puglia and Basilicata, boasting an incredibly rich culinary tradition. It's precisely this richness that drives me to cook: so many recipes, so many flavors, unique and unmistakable, exclusively ours. Panzerotti, focaccia barese, Pan cotto alla gravinese, U' ruccl (typical San Giuseppe focaccia), sweet ricotta calzones with pork ragu, orecchiette al tegamino, cavatelli, baked finocchietti, cartellate, and much more—these are the typical flavors of my homeland. For the past 12 years, I have been living in Lecce, in the wonderful and spectacular Salento, and from the beginning, I started to savor and create dishes typical of the Salento tradition, including the famous Pezzetti di cavallo, Ciceri e tria, Pittule, Pizzo, Frise, and the unmissable pasticciotto.
