Tuscan schiacciata
Thin pizza (without yeast)
There is no "best" way to make bread, but rather the way that best suits your personality and lifestyle. All you need is an electric oven, a few utensils, and a few basic rules: in just a few hours, you can taste your homemade bread. During this course, suitable for all ages, we will prepare Tuscan schiacciata and thin pizza without yeast. You can do it with me and, once you get home, create and enjoy your own bread in just 3 hours. During the lesson, you will receive general information on Italian and foreign bread making, knead dough, and learn tricks and secrets about dough, baking, shapes, and textures. You will be provided with handouts containing all the information and recipes for the two types of bread prepared during the course.
We had a wonderful afternoon at Luisa's cooking class. So do not hesitate to book. Luisa is a warm and welcoming host who taught us a lot about making pasta. It felt special to be in her home and meet her lovely dog Summer. In total, we made three different types of pasta. We will certainly try to recreate this at home. Luisa's instructions were clear, and she also provided us with information to review later.
Thank you, Luisa, for a fun afternoon that ended with a delicious pasta meal.

pasta. My needs were thoughtfully accommodated (wheelchair user).

Luisa, a very kind and helpful hostess, welcomed us into her home and shared some of her knowledge with us. At the end, we cooked together with her and concluded the wonderful morning with a good lunch, good wine, and lots of conversation. An experience to absolutely be had.

This pasta class was so much more than just a pasta class. Luisa was warm, funny, patient, and taught us about the history of the pasta along with how to make it. We felt so comfortable in her home. It was a peaceful place- perfect for learning a new skill. We highly recommend this experience!

"I was born in Romagna, but now after more than 35 years in Pistoia my home is Tuscany. In the green, but a few kilometers from the station and the Piazza del Duomo. I have a creative and curious soul and in the kitchen, through the dishes of the Romagna and Tuscan tradition, I express at best my spirit of welcome. I love to make homemade pasta, bake bread, cook the classic desserts of the tradition."
