I will welcome you into my home, inside one of the oldest nurseries in Pistoia. In my kitchen I will teach you how to make egg pasta according to my family's tradition. You will be able to try kneading and rolling out the sheets with a rolling pin or with the small manual Imperia machine.
You will be able to choose from classic formats such as tagliatelle or farfalline or make garganelli (a type of macaroni from the Romagna tradition) or inganna-prit (a kind of mock cappelletti). You will be able to choose at the time whether to enjoy the pasta immediately topped with a Tuscan mascarpone and sausage sauce or take it home with you. The lesson and eventual consumption will be enhanced by a good local Tuscan red wine, printed recipes and numerous tips and anecdotes.

- Luisa was an amazing host and teacher! She made me feel so welcome and taught me how to make pasta, all while sharing tons of fascinating anecdotes. Her house was stunning and incredibly inspirational. I had such a wonderful time with her—highly recommend!
- I really enjoyed this class at Luisa’s lovely home. She was so sweet and accommodating to my daughter and I, offering a special fish dish since I do not eat meat. There was a special garlic and a goat cheese from the farm too that was delicious. Her directions to make simple homemade pasta was spot on and she even lit a candle with dessert to celebrate my daughter’s 21st birthday. I would highly recommend this class.
