Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

Shared Experience
Your experience
  • Coloured potato gnocchi
  • Torta Tenerina

Gnocchi are a vital part of tradition: the basics you learn in the kitchen with those who love you; from grandmother to mum, and from mum to daughters. Delicious with borage, coloured with beetroot, green with spinach – or nettles – and even blue if you like (yes, blue… ask me how…). And no eggs.

Let’s start with the cake, though, which needs to go in the oven. Whilst the cake is baking, we mash the still-steaming potatoes, chop the herbs and knead the mixture to form small loaves. Then we slice them and score them with a grater, just as Grandma Pina taught me. The sauce is irresistible: we toss them in creamy Gorgonzola and add a touch of crispy prosciutto. Yes, indeed: your hands create delicacies. To finish, the freshly baked ‘tenerina’.

We had a wonderful time in our class! They were wonderful hosts! We got to choose to make certain pasta dishes and then enjoy them on their wonderful back terrace in what is just a most beautiful and quaint neighborhood! We got to experience a piece of Bologna we never would have without them! Can not recommend this enough to anyone who is from beginner to food/cooking enthusiast! It was fun, informative, and delicious!

We cook dishes from the Bolognese and Romagnola tradition, but we also love to be inspired by other cuisines, which make our table more lively and flavorful. Tradition is our certainty, imagination the means to reinvent it. In our kitchen, seasonality guides the senses, and the search for harmony on the plate is often a topic of discussion between us, as we have shared a passion for good food for forty years — a passion that started in a restaurant! We inherited our love for cooking from our families: Eleonora from her mother, a painter, and her grandmother, a passionate homemaker; Federico from his grandmother, a master of lasagna and crème caramel, his father in passatelli, and the “dada” in the world’s best roast beef. For ten years we ran a shop-laboratory in the center of Bologna, where tradition and creativity met under the porticoes amid aromas, chatter, and the curiosity of passersby and tourists.
