"I have always had a great passion for cooking, transmitted by my grandmother who ran a bakery in the city of origin. On Sundays, casoncelli, risottos, baked pastas were traditionally served, preceded by abundant appetizers based on cold cuts and cheeses. This passion pushed me to want to know more and more the world of Italian gastronomy, so much so that years ago I attended a professional course as a pizza maker. The common denominator of my dishes is the search for excellent products."

The Cesarina Debora, resident in Milan but originally from Bergamo, offers a typical menu of the territory by welcoming you in their home, rich in antique furniture, where time seems to stand still. Warmth and authenticity are the watchwords of the menu that will accompany you in the colors, scents and tastes typical of the Lombardy region, of which Milan is the capital. After a welcome toast accompanied by small canapés and homemade sauces, we will prepare together the dishes of the menu: from the fried taleggio discs made with taleggio cheese from the Orobic Alps, the casoncelli, typical fresh pasta ravioli filled with meat, salami, parmesan cheese and many other tasty products that will make it a tasty and succulent dish, all seasoned with butter, sage, crispy bacon and plenty of parmesan cheese. Finally, we will prepare the sweet "Polenta e osei", or polenta with chocolate birds, made with sponge cake enriched with layers of butter cream, chocolate, rum, hazelnut paste and covered with a thin layer of yellow marzipan to give the appearance of a polenta with handmade chocolate birds. At the end we will taste together the dishes made to share the sensations! There will be a digestive liqueur made with mountain herbs born over 2,000 meters high. Now all you have to do is let yourself be guided along this gastronomic experience that will lead you to territories far from the cities and the frenzy of traffic.

La Cesarina Debora proposes recipes based on an ingredient symbolizing life and rebirth and present in many recipes all over the world: the egg. Even in Italy we can find it in both sweet and savory dishes, in sauces, ice cream creams ... there are recipes that represent the symbol of some cities in Northern Italy that are part of this special cooking class: eggs alla bella Rosina, filled with a tasty and creamy filling, fresh pasta ravioli with a melting heart, filled with ricotta spiani parmesan cheese and just the yolk seasoned with butter, herbs and parmesan cheese and, finally, the eggs of King Vittorio, poached eggs on a Piedmontese cheese fondue. Starting with fresh eggs, we will prepare these surprising and tasty dishes that will make this well-known ingredient the Prince of the table.

My grandmother Carolina, during the Second World War, had with her husband, grandfather Guido, a baker's store in the city of Bergamo, a small and pretty town not far from Milan. They could never be missing from the table:  schiacciata as an appetizer, a typical focaccia very thin and made with 00 flour but without yeast, and stuffed with stracchino cheese from the Orobie Alps, salt and pepper,  the pancot maridaa, that is stale bread soaked in abundant meat broth, then cooked and seasoned with butter, eggs, pepper and plenty of grana padano cheese;  brusadela: soft focaccia accompanied by salami and cheese typical of the Lombardy valleys;  and to top it all, the iced paradise cake, a peculiarity created by grandmother Carolina who glazed the cake with egg whites, almonds and powdered sugar before baking.  I wait for you in my house to accompany you along this path of ancient traditions, pampering you with scents and genuine flavors!

Debora was amazing!!! I found Cesarine online when looking for a cooking class and I couldn’t be happier I stumbled upon this one. When I walked into the door I felt so welcomed in her home and she truly catered the entire experience to ensure everything was perfect. She took time to get to know us and allowed us to get to know her. The cooking was so fun and of course eating it was great too! She is such a sweet host and my friends and I highly recommend her as we had such a great experience.

Debora made us feel like family from the moment we entered her home. The class is one of the best memories from our trip. She was obviously a fantastic teacher because the food turned out delicious. And her husband was delightful too. We were disappointed that we were not able to return to learn how to make the osso bucco that she was teaching later that week. She even printed out a copy of the photo she took with a hand written note as souvenir. We will have to go back for another class one day. Thanks for a wonderful, memorable evening Debora!

We took the cooking class and prepared two pasta dishes and tiramisu; all three dishes were the best we had in Milano! Debora and her husband were very helpful in giving us tips for around town. Siamo stati da Deborah in 9, compagni di Master. E' stata una bellissima esperienza. Deborah ci ha accolto nella sua bella casa, curata ed elegante. Tutto pulitissimo, a prova di Covid, con depuratori dell'aria, calzari, gel, tutto perfetto. La cena è stata piacevole: antipasto di salumi e formaggi, con le focacce fatte in casa da Deborah, squisite! Poi il piatto re della serata, le tagliatelle fatte in casa: con i porcini, con il tartufo bianco, col il sughetto pomodoro pachino e basilico fatto da Deborah..!! La bontà della pasta fresca! Grande attenzione per gli intolleranti al lattosio. Deborah è un ospite attenta e premurosa. Molto molto appassionata...e questo fa la differenza! Grazie di cuore da tutti noi.

Elle adore transmettre sa passion de la cuisine, et ce moment privilegie et joyeux etait aussi l'occasion de discuter sur les habitudes en italie.
