These delicious and crispy cutlets are the perfect accompaniment to a tasty friggione, the typical Bolognese sauce, or delicate gratin tomatoes, to delight your taste buds and your mood. And for an appetizer? An exquisite soufflé of vegetables with a crispy Parmesan wafer. How could we not end the experience with a classic tiramisu? This easy-to-make recipe is loved by all guests.

- Paola è stata molto accogliente e ci ha rivelato i segreti della cucina bolognese tramandati direttamente dalla sua nonna. Il corso è stato molto istruttivo e alla fine abbiamo gustato le eccellenti lasagne che abbiamo preparato sotto la brillante regia di Paola. Un'esperienza fa fare per chi vuole scoprire i segreti delle varie specialità Bolognesi.
- Paola was fantastic! Very welcoming and kind. We were thoroughly impressed by her attention to detail and patience throughout the class. We learned many interesting skills that we will use once we get back home. Next time we visit Bologna, a must visit will be to take another class, perhaps her Grandmothers lasagna?
