    I will welcome you to my kitchen, located in the old farmhouse inside one of the oldest nurseries in Pistoia. Together, we will immerse ourselves in the preparation of real Tuscan bread, following a recipe I learned from one of the bakers who helped draft the Pane Toscano specification. This unique bread, devoid of salt and composed only of flour, yeast and water, represents an authentic tradition. You will have the opportunity to experiment with different bread formats as I share insights on flours, various methods of rising and baking, as well as share original tricks and ways I have developed over time. At the end of the class, you will receive detailed recipe handouts and have the opportunity to take home all the bread.

    I would definitely recommend this to anyone visiting Pistoia. It was such a great lesson in making pasta in a local home. Our host, Luisa, was so kind and it felt like having dinner with a family member. She was patient in providing us with instructions and made everything so simple to understand and the food was so delicious!

    Luisa was such a great teacher and an even better cook! We had such a fun time learning how to make the different shapes of pasta and even got to learn a bit of Italian history from her stories. I would highly recommend taking a cooking class while abroad but would highly recommend Luisa as your instructor. Can't wait to cook at home and teach all my friend everything I learned!!

    Ogi 19.05.2025 ho imparato a fare 3 tipi di pasta fata in casa e dei secreti molto importanți dalla cucina italiana da una seniora che si chiama Luisa che e stata molto gentilisima, molto ospitaliere, spiegando paso dopo pasa tutto procedimento come si fa la pasta ,come fare anche per conservarla in frizer se la fai tanta e anche come usare facilmente la machina per la pasta. Corso po essere adato anche a chi non ha fato mai pasta in casa per che la segniora a demonstrato molta pasienza ed e una persona molto sociabile. Se ci poteci dare piu di 5 stele lo fare. Ringrazio a a lei e anche a questo metodo che si chiama Cesarina che lo scoperto da poco. Ricomando a provare per che parole sono inutili da capire una esperienza come questa!

    A Delicious, Heartwarming Experience We had the absolute pleasure of taking a private cooking class with Luisa and it was truly one of the highlights our our trip. Born in Bologna, she brings all the warmth and culinary magic of Emilia-Romagna to her beautiful Tuscan home. From the moment we arrived, we felt like I was visiting an old friend. Her home is stunning—elegant yet cozy, with a charming garden full of herbs and flowers, and the gentle presence of her adorable dogs made everything feel even more welcoming. We started with schiacciata a rustic, hand-torn focaccia that’s soft inside and golden on the edges. She showed us how to make it with care and passion, explaining each step in a way that made it easy and joyful—even for a beginner. Then we moved on to her “think pizza”—a creative, lighter twist. We ate and sipping wine and enjoying what we had just created together. It wasn’t just a cooking class—it was a true Italian experience filled with stories, laughter, and soul. We left not only with new cooking skills but also with beautiful memories we will cherish forever. If you’re anywhere near Pistoia, do yourself a favor and book this experience.     I really enjoyed this class at Luisa’s lovely home. She was so sweet and accommodating to my daughter and I, offering a special fish dish since I do not eat meat. There was a special garlic and a goat cheese from the farm too that was delicious. Her directions to make simple homemade pasta was spot on and she even lit a candle with dessert to celebrate my daughter’s 21st birthday. I would highly recommend this class.

    "I was born in Romagna, but now after more than 35 years in Pistoia my home is Tuscany. In the green, but a few kilometers from the station and the Piazza del Duomo. I have a creative and curious soul and in the kitchen, through the dishes of the Romagna and Tuscan tradition, I express at best my spirit of welcome. I love to make homemade pasta, bake bread, cook the classic desserts of the tradition."
