Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

Your experience
I will welcome you to my kitchen, located in the old farmhouse inside one of the oldest nurseries in Pistoia. Together, we will immerse ourselves in the preparation of real Tuscan bread, following a recipe I learned from one of the bakers who helped draft the Pane Toscano specification. This unique bread, devoid of salt and composed only of flour, yeast and water, represents an authentic tradition. You will have the opportunity to experiment with different bread formats as I share insights on flours, various methods of rising and baking, as well as share original tricks and ways I have developed over time. At the end of the class, you will receive detailed recipe handouts and have the opportunity to take home all the bread.
It was super cozy and snug at her home, she told me lots of fun facts and the best part was that you could really recreate a real family recipe.

Luisa was a wonderful host! Easy going, patient and full of interesting stories. And of course an amazing chef. It was a real pleasure to learn to make pasta and Tiramisu in her beautiful home. We definitely recommend booking with her. Thanks again! Wouter and Jamilla

We had the most wonderful cooking class with the sweetest and kindest madame! From the moment we arrived, she made us feel completely at home.
She taught us step by step how to make four different types of pasta, sharing all the traditional techniques with so much care and love. It was not only fun but truly educational.
And the best part! We got to taste everything we made and the pasta was absolutely delicious!
Also, we fell in love with her adorable dog, who made the whole experience even more special.
Thank you for such a beautiful, authentic Italian memory, we will never forget it!

We attended a cooking class on July 28th, 2024. It was a really lovely evening.
There wasn’t that much actual teaching — it was more about stories, traditions, and the local area.
Personally, I would describe it more as a private dinner in a private home.
It definitely had its charm — it was a wonderful evening with delicious food. Thank you from all of us

"I was born in Romagna, but now after more than 35 years in Pistoia my home is Tuscany. In the green, but a few kilometers from the station and the Piazza del Duomo. I have a creative and curious soul and in the kitchen, through the dishes of the Romagna and Tuscan tradition, I express at best my spirit of welcome. I love to make homemade pasta, bake bread, cook the classic desserts of the tradition."
