I will host you inside the farmhouse located in one of the oldest nurseries in Pistoia. In my kitchen, we will immerse ourselves in the preparation of numerous formats of traditional Italian stuffed pasta. I will share with you the technique for kneading and rolling out egg pasta sheets, using both a rolling pin and a machine. You will have the opportunity to create ravioli of different sizes and cappelletti in a variety of shapes and sizes. We will conclude the experience by making stuffed quadrucci, an ancient and wholesome pasta to be enjoyed in broth. I will provide you with detailed recipe handouts so that you can replicate the experience at home. You will also have the opportunity to taste the fruits of your labor directly with me or take them home.
