    This course is available exclusively during the fall, when our woods are filled with mushrooms after the rains. We will buy them fresh directly from the stall at my neighborhood market. We will explore together each step in the processing of this precious raw material. I will offer three delicious recipes: a fresh raw mushroom salad with parmesan shavings as an appetizer, or breaded and fried mushrooms. As a first course, we will prepare homemade noodles with fresh mushrooms, and to finish, a mouth-watering chocolate mock mushroom for dessert, all accompanied by an excellent local wine.

    We really enjoyed our cooking experience with Benedetta and her mom. They were lovely and patiently showed us how to make pasta. We would love to do another class with them if we come back to Italy.
