    This course is available exclusively during the fall, when our woods are filled with mushrooms after the rains. We will buy them fresh directly from the stall at my neighborhood market. We will explore together each step in the processing of this precious raw material. I will offer three delicious recipes: a fresh raw mushroom salad with parmesan shavings as an appetizer, or breaded and fried mushrooms. As a first course, we will prepare homemade noodles with fresh mushrooms, and to finish, a mouth-watering chocolate mock mushroom for dessert, all accompanied by an excellent local wine.

    Everything about our cooking class with Benedetta was exceptional! The food was amazing, she went above and beyond being a chef and host for us.     Benedetta is incredibly knowledgeable, passionate about food, and made me feel at home from the moment I arrived. It was my first time making fresh pasta, and thanks to Benedetta’s clear instructions, we made delicious ricotta ravioli, tagliatelle, plin, tiramisù, and bagnetto verde. It was such a happy, relaxing afternoon, and the best part was sitting down together to enjoy the fresh homemade meal we had prepared. It felt like sharing lunch with family. It was also such a joy to meet Benedetta’s adorable mamma, who made the experience even more special. I highly recommend Benedetta to anyone looking for a true Italian cooking class full of passion, tradition, warmth, and amazing food. I would do it again in a heartbeat!
