Hi from Mirella!

Stefano and I, we are a couple in life and in the kitchen!!We have been in the restaurant world for many years, and these experiences have become our "Logbook" to be made available to our guests. We have made hospitality our passe-partout, opening the doors of our home to guests who come from all over the world. We have made our knowledge of food, dishes and traditions available, linked to our territory and our family. We love sharing and exchanging with them everything concerning anecdotes, secrets and tricks to obtain dishes that are delicious to taste and beautiful to observe (you eat with your eyes first!), but very often also the techniques, such as for making pasta, the corrections , when a step is wrong, the alternatives when an ingredient is missing. We always prepare a guide book with recipes, translated into English, with the conversion of weights and so thanks to these, guests follow us step by step or simply have the opportunity to repeat them once they get home. We like to talk not only about cooking, but also about the history of cooking and its transformations, distinguishing "poor cuisine", which is the strength of our Florentine tradition and the noble one that has Renaissance cuisine as its master. We have done studies to reapply recipes from the past with today's novelties and means, we have gone from "slaves" to orchestra conductors because the kitchen requires a set of elements to guide, interact, interchange, with solos and symphonies. You can hear smells and sounds when the pans are on the stove and enjoy them all together around a well-laid table, because this too has its importance. We love to use local and seasonal products, so our cuisine will always be different, respecting traditions and holiday periods. Cooking is also alchemy, it is no coincidence that the term recipe is used!
