    I will welcome you into my home, where you will immediately feel like longtime friends. Together, we will prepare one of the most iconic dishes of Roman cuisine: Carbonara. I will guide you step by step, sharing stories and secrets to achieve the perfect creamy texture and an irresistible balance of flavors.

    Once it’s ready, we will sit down to enjoy our Carbonara, accompanied by a small aperitif that I will have prepared in advance for you—a taste of Rome that will make you feel even more immersed in the city’s gastronomic tradition.

    Un'esperienza indimenticabile! 🌟 Ieri sera ho avuto il piacere di partecipare a una cena con "Le Cesarine" e sono rimasta entusiasta! La mia cesarina, Ofelia, è stata davvero fantastica. Ci ha accolto con grande calore nella sua bellissima casa nel cuore di Trastevere, creando subito un'atmosfera accogliente e familiare. La cena è stata un tripudio di sapori: due antipasti deliziosi, un primo perfetto e ben tre dolci che ci hanno lasciato senza parole! Il vero "cavallo di battaglia" è stata la tartare con giardiniera, un piatto fresco e saporito che ci ha conquistato al primo assaggio. Ma il dolce, composto da meringhe, panna e fragole, è stato una vera poesia per il palato. Siamo state trattate con tanta attenzione e cura, e la qualità del cibo era davvero eccellente. È stata una serata che non dimenticherò. Grazie di cuore a Ofelia per questa cena memorabile! ❤️

    Hello everyone! Mine is a cuisine that starts above all from traditional family recipes. I was born in Calabria, but mine is a family branched out in cultural and consequently also culinary history. A great-grandmother of a Jewish family married to a great-grandfather an aviator American, another who abandoned dancing with the consuls for a marriage with an intellectual of peasant origins, all united with the Calabrian mountain tradition.From the branch of Jewish origins I took the great love for sweet and sour, for fermented recipes and spicy scents, from the noble branch some recipes that I discovered to be relatives of sometimes Sicilian and sometimes Neapolitan cuisine (from the Kingdom of the two Sicilies:), some that I have never happened to find in other houses. I moved to Rome almost twenty years ago to study and I stayed there, here I also assimilated some recipe books from my partner who is a Roman from Trastevere, making my own super recipes rlatives of the Roman tradition, such as the first classics or the Maritozzi, which I often personalize with fillings that bring me and my guests back to Calabria!
