    I am Paola, Cesarina from Bologna, and I await for you at my home to spend an evening discovering balanzoni, a stuffed pasta that is a symbol of our tradition.

    Together, we will learn the secrets and tricks to prepare this dish. This fresh pasta stuffed with mortadella takes its name from Balanzone, a mask of Bolognese origin and an official character of the local carnival.

    After the course we will taste the balanzoni, pairing them with a good glass of wine. It will be a unique opportunity to share an evening together and meet new people. I look forward to seeing you!

    How lucky of us to find Paola. It was the Saturday before Buona Pasqua and there on https://cesarine.com/en was the perfect menu that we were seeking for our Bologna cooking experience! What made it perfect? The chef, her menu, the location, the environment, the instruction, and the history of each item we prepared together. What a beautiful day we had with Paola in her lovely kitchen learning how to make “real” Bolognese sauce and creating beautiful pasta to serve it on. We had so much fun getting to know each other. All was capped off with a lovely lunch served in her beautiful home. We now have both the knowledge and understanding of what it takes to create what Bologna is so famous for. Paolo, thank you again for such a delightful day.

    Paola was a great host. She welcomed us in her cozy and charming house to teach me and my partner how to make tortelone, tagliatelle, and tiramisu. She was very patient and explained all the steps in a perfect English. The food was delicious. She made us some appetisers such as bruschetta and focaccia with ricotta and olives. The experience was delightful and it was a pleasure to meet Paola. We super recommend it, it was a 10/10.

      In this tranquil location our Cesarina takes us on a journey through the flavours of Bologna’s local traditions, from mortadella to ragù alla bolognese. “I love cooking, because it brings together family traditions and the joy of sharing food with other people”.
