    Who said that Bolognese cuisine can't be vegetarian? In this course, we will learn not only the art of hand-rolled pasta, but also delicious recipes to satisfy a plant-based diet or simply those who want a change from time to time. Lasagna with pesto, béchamel sauce, Parmesan cheese, and chopped pistachios will amaze even the most traditional Bolognese palates. We will also prepare a light and fresh version of tagliatelle and, finally, tortelloni stuffed with pumpkin or other vegetables depending on the season.

    This was a great experience! Everything was well prepared with respect to our interests, she offered perfect recipes for us being vegetarians and shared a lot of additional special knowledge with us. We will for sure come again whenever in Bologna!

    I am from Emilia, and since I was a child I have seen and helped my mother prepare tagliatelle, tortelloni, and lasagna – a tradition that, unfortunately, I didn't continue. This course with Maria Sole has awakened in me the memory of ancient gestures and the desire to “get my hands dirty” with flour, so that this art is not lost. The vegetarian version that Maria Sole proposes perfectly reflects my feelings and combines tradition with the evolution of modern tastes. Impeccable hospitality! Maria Sole shared teachings and "tricks" with pleasure and competence. I highly recommend her course to everyone. And I assure you that even those who already know how to make pasta will find new ideas and inspiration.

    With a Bolognese grandmother and a Sicilian one, I couldn’t help but fall in love with good cuisine from a young age. After taking several courses and completing a gastronomic master at the Gambero Rosso school, I traveled abroad, working as a chef in various restaurants. When I returned home, I felt the desire to share our cuisine with those who don’t yet know it, explaining its origins and preparations. I personally welcome my guests at home, trying to convey a bit of my passion and love for good food. My cooking is healthy, focused on the quality of ingredients, yet faithful to tradition. Beyond typical Bolognese specialties, I love plant-based dishes and pastry. My goal is to provide a complete experience: from taste to understanding, explaining each preparation in both Italian and English, so that guests can enjoy not only the dishes but also the history and care behind them.
