I am Cristina, Cesarina Bolognese DOC, and I am waiting for you at my home to spend an evening discovering Smeraldini, the ancestors of tortellini. Their history is rooted in the gastronomic traditions of the province of Bologna.
Together, we will discover the secrets and tricks of preparing this ancient dish, handed down from my grandmother, who came from a village in the Apennines of Modena. Instead of the classic tortellino in broth, she prepared a slightly larger one, with a more flavorful filling and topped with Parmesan cream, to introduce us to different flavors.
After the course, we will taste the Smeraldini, accompanying them with a good glass of wine. It will be a unique opportunity to share an evening and meet new people. I look forward to seeing you!
