In this pastry course, held in my home in the heart of Bologna’s historic center, we’ll discover the true story of macarons.

Although today they’re considered a symbol of France, these treats actually have deep Italian roots. The modern macaron evolved from an ancient Italian almond-based cookie called “maccherone” or “maccarone,” a medieval term used for any soft dough. In 1533, Catherine de’ Medici of Florence married Henry II of France and brought with her Italian chefs and pastry makers, who introduced many recipes to the French court—including almond cookies, the ancestors of today’s macarons. Together, we’ll create three special variations of this delicious treat: raspberry, chocolate, and lemon-basil.
