    I look forward to welcoming you to my home surrounded by greenery, where we'll start with a walk through my family's olive grove, followed by a tasting of our homemade olive oil and olives. Together, we'll prepare a traditional Italian aperitivo: bruschetta with seasonal garden spreads, local cheeses and cured meats, all paired with white or rosé Prosecco.

    We’ll make fresh tagliatelle from scratch, and I’ll also show you how to dry and store them, along with two extra recipes for using them later. We’ll cook the family’s traditional meat ragù—or, upon request, a vegetarian sauce.

    At the table, we'll enjoy wine from the Lucca hills. To finish, a classic tiramisù or a fruity version with strawberries or peaches.

    Rossana was truly incredible! We had no idea what to expect going into our class and she made us feel right at home the first second we entered her home! She was so genuine and was patient as she taught us how to make Italian cuisine. None of us had ever made pasta and when we left we felt like we could do it again! Her husband was incredible, too! They made the best team. We loved getting to be inside their home & see their gorgeous yard with the large olive trees. We ate outside & asked them to eat with us. It was absolutely one of our favorite memories of the trip! If we could give them 10 stars, I would! THANK you, for making our trip so special!     I prefer simple dishes made with just a few wholesome, seasonal ingredients, often harvested directly from my own vegetable garden and orchard. I love to enhance the authentic flavors of the land using extra virgin olive oil that we produce ourselves. My cooking is rooted in traditional Tuscan cuisine, but I also enjoy experimenting: I create original recipes that I carefully jot down in my personal recipe book, built over time with love and passion.
