Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

Shared Experience
Your experience
  • fried sage
  • maltagliati in chickpea soup
  • Seasonal fruit tart

In this cooking class, you will learn step by step as you cook. We will fry sage together to create an irresistible appetizer that is so good you will want to lick your fingers. We will knead flour and eggs to shape maltagliati, the ideal pasta to pair with traditional Roman chickpea soup.

The dessert will be a tart prepared on the spot, which we will enjoy while still warm, straight out of the oven. Each stage will be interactive: you can observe, try, and ask questions as we cook side by side. For those who wish, the fried anchovies can be replaced with a vegetable for a completely vegetarian version.

I recently attended a pasta cooking course hosted by Rafaella, and it was a genuinely enjoyable and enriching experience. From the moment I arrived, her warm and amiable personality made everyone feel at ease. She has a natural way of connecting with people, which created a relaxed and welcoming atmosphere throughout the session. Rafaella is not only friendly but also an excellent teacher. She explained each step clearly, demonstrating techniques with patience and confidence. Whether it was kneading the dough to the right consistency or shaping the pasta, her guidance made even the more intricate parts feel approachable. She paid close attention to detail and ensured everyone kept up, regardless of their skill level. Her home was just as impressive as her teaching—clean, cozy, and inviting. It felt like being welcomed into a space where food and hospitality truly matter. The environment added to the overall experience, making the class feel personal rather than transactional. Overall, this course was a perfect blend of learning, comfort, and great company. I would highly recommend it to anyone looking to improve their pasta-making skills while enjoying a warm and engaging setting.
