    The tortellino is the iconic dish of Bologna, and in this course, you will learn how to make it step by step, from simple ingredients to creating a masterpiece. I will reveal all the secrets to making your Sundays special by recreating this Bolognese tradition at home. Cooking is an act of love that everyone owes to themselves, and I’m here to show you how. We’ll start with an appetizer made by me, then move on to making the dough, preparing the filling, and shaping the tortellini. We’ll finish the course by tasting the tortellini in broth or with Parmesan cream, followed by an iconic dessert: tiramisù. I look forward to welcoming you for an authentic and delicious experience!

    Our experience was booked from 10:00-1:00. I would have liked to have been told to park outside of the historic city center and walk to the meeting point. This lead to a late start. You will have an interpreter if you are English speaking. We made 3 pastas which was a wonderful experience and were able to enjoy each one in Paola's beautiful apartment. If you're on a time table this is not the experience for you. We went over 2 hours longer. It was truly an immersion into Italian cooking. Paola allows you to take part in the mixing and rolling of the pasta dough and allows you to fill and put together the pasta. It would have been wonderful to have a print out of the recipes. We enjoyed a lovely 3 course meal with accompanied wine.
