The course will be held in a villa surrounded by greenery a few kilometers from St. Peter's, a quiet corner perfect for cooking and then enjoying your own preparations. During the course all the techniques, simple and replicable, for creating a tasty appetizer will be taught. You will cook together supplì, fried balls of rice cooked in tomato and basil sauce with a heart of stringy mozzarella in the center; mozzarella in carrozza; mixed bruschetta; battered vegetables such as artichokes, squash blossoms, mixed vegetables depending on the season and finally fried pizza bon bons (with ready-made dough) with tomato and basil.

Cristina’s class on the four roman sauces was fantastic and she is lovely. I have taken many cooking classes over the years, several in Italy, and this was by far one of the best. Taking a private lesson was so much more enjoyable for me than being in a group of people at different levels of experience. Cristina spent time going into both the importance of ingredients and also the nuances between the preparation of the 4 sauces. I recommend coming hungry because there is a lot of food to eat!
