    I am Paola, Cesarina from Bologna, and I await for you at my home to spend an evening discovering balanzoni, a stuffed pasta that is a symbol of our tradition.

    Together, we will learn the secrets and tricks to prepare this dish. This fresh pasta stuffed with mortadella takes its name from Balanzone, a mask of Bolognese origin and an official character of the local carnival.

    After the course we will taste the balanzoni, pairing them with a good glass of wine. It will be a unique opportunity to share an evening together and meet new people. I look forward to seeing you!

    What a lovely experience learning to make lasagna bolognese with Paola. After 4 weeks of travel, the day was like a breath of fresh air. Spending the day cooking and meeting a new friend. Sitting down in her beautiful table and having a home cooked meal was perfect. I learned a lot about local cuisine. I love how food is a great unifier across the world. We all enjoy the love & traditions conveyed in the kitchen. I intend to make this with my kids when we get home!! Perhaps a new holiday tradition for us now. Grazie Paola❣️

    Our Bologna cooking class with Paola was fantastic! My wife and I were warmly welcomed and immediately felt like we were reconnecting with a long-time friend. All cooking ingredients, utensils, and recipes were ready upon our arrival, which allowed ample time for learning the cooking techniques while asking plenty of questions. To our delight, Paolo arranged for us to eat our cooking results on her beautiful patio, where we enjoyed a bottle of Chianti Classico wine from our travels. Our memorable time with Paola and our cooking experience was one of the highlights of our trip to Italy. Grazie mille!
