    Pisa is famous for the richness of its countryside, forests, and sea. From these places come diverse and highly refined products: mushrooms, vegetables, fruits, fish, meats, cold cuts, cheeses, all rooted on a solid tradition of rich and varied home cooking. With a plate of pasta, fresh or dry, one can indulge in sauces, condiments, depending on the season: winter with a rich variety of meats and cheeses, in spring with vegetables, in summer with fish and vegetables, primarily tomatoes, in autumn with mushrooms and cured meats in endless variations and tastes. Wine in Tuscany, there is no shortage and we will pair it wisely with the proposed pasta dishes. At my home, an ancient Pisan residence next to the Leaning Tower.

    Flora and Claudio were very hospitable, welcoming us warmly into their graciously appointed apartment. Flora is an excellent chef, and the three dishes (plus dessert!) she made for us were all delicious. While we did not do a lot of the cooking ourselves, mostly prepping, we still learned a lot. Flora had prepared homemade pasta before we arrived, and although the sauces were all relatively simple with few ingredients, they were delicious. We greatly enjoyed the conversation at the dinner table and were sorry when the evening ended. It was one of the best experiences we had in Italy.Thank you, Flora and Claudio, for a wonderful evening.

    Flora was a great teacher. She and her husband welcomed us warmly, and with a lot of attention to detail, they designed the course for us. We learned to prepare tiramisu and two different types of pasta. During a shared meal, we tasted our creations. Flora prepared everything very warmly and we were able to enjoy the meal. The two of them are wonderful hosts and you can tell they really enjoy teaching the courses. We would book a course again at any time.

    Flora & her lovely husband opened their home up like we were family. We learnt so much that we hope to do when home in New Zealand. We cooked, we laughed & shared a lovely authentic Italian meal. Was our best organized day of our trip. We felt so at home, so loved every minute of it. My husband has now put in his birthday meal request from what we learned..... thank you as totally recommend this experience with Flora.

    The cooking class/meal was simply wonderful. The table was beautifully set and we felt like we belonged to their family. She showed us how to prepare the main course and it tasted wonderful. We had three courses and they were pure Tuscany/Italy. Simply delicious. Flora and her husband briefly shared their life with us and we thank them again sincerely. We can recommend Flora 100%.

    When one thinks of the city of Pisa, the iconic monument, the Leaning Tower, immediately comes to mind, as well as the thousands of tourists intent on being photographed in bizarre poses at the foot of the famous monument. In the shadow of the famous tower, there are other treasures to be discovered, including the delicacies prepared by Cesarina Flora, who lives in the heart of this Tuscan city.  Starting from an early age, Flora carefully followed her family’s culinary preparations and since then has always found in cooking an oasis of serenity, research, knowledge and, above all, a great passion in keeping the local traditions alive. Today she cooks for her numerous friends, creating dishes with new and renewed flavors. She chooses her ingredients with extreme care, insisting that they come from small, highly reputable local businesses.  Her table setting is classic and elegant, using treasured dinnerware and hand-embroidered tablecloths. She has an eye for detail, combining colors based on the food she is serving, as well as the floral compositions and small potted plants.
