In this completely vegetarian cooking class, you will learn some typical Bolognese recipes passed down through generations, as well as how to knead a great pizza.
In this course I propose farfalline (we call them stricchetti) topped with a tomato and onion sauce, typical Bolognese, perhaps one of the few vegetarian recipes in my city.
This will be followed by pizza, an excellent margherita pizza, with the addition of some mushrooms, if my guests like, to be baked in the oven.
It concludes with another great classic: torta tenerina. All vegetarian and all extremely tasty!
At the end of the course we will enjoy the prepared dishes with a good local wine.

- We took Paola's class to learn how to make pasta and ragu and we were so pleased with the entire experience. Paola welcomes you into her lovely home and she guides you through making a simple yet delicious ragu. While your ragu simmers on the stove, you make two different types of pasta - one with egg and one with only semolina. She teaches you how (and when) to handle the dough - rolling it out to the perfect thickness and cutting it into strips to make the specific shapes desired. When it's all over, you've made a wonderful pasta dinner that could be served with pride!!! Highly recommend her class.
