Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina

Shared Experience
Your experience
  • Tortellini (homemade pasta) in meat broth
  • Tortellini (homemade pasta) with Parmesan cream
  • Tenerina (traditional chocolate cake) with mascarpone cream

It is said that tortellini were inspired by Venus's navel, a symbol of perfection and harmony. In this masterclass, you will enter the heart of Emilian tradition, in a typical Bolognese house just a few steps from the historic centre of Bologna and the charming Sanctuary of San Luca.

Guided step by step, you will learn how to roll out the dough by hand and fill the tortellini according to the ancient technique, then season them according to two great classic variations: in broth and in Parmigiano cream. We will conclude on a sweet note by preparing a delicious and soft torta tenerina served with mascarpone cream. An authentic, convivial and flavourful experience, allowing you to take home not only a recipe, but a piece of authentic Bolognese cuisine.

My partner and I included this activity in our short stay in Bologna, and honestly, it was a perfect choice. You learn and have fun at the same time, with Laura and her family going above and beyond. Top-notch welcome, products of the highest quality, and Laura and her family were super welcoming and hospitable throughout the experience. Highly recommended.

We booked a pasta-making class and were paired with Cesarina Laura, who turned out to be a kind and welcoming hostess. Alessandro, her partner, is very friendly and we spent a lovely evening together on the most romantic day of the year.

Laura welcomed us wonderfully. We learned a lot and she answered all of our questions. The offered wine, dessert, and after-dinner coffee were fabulous. We exchanged about our cultures through the preparation and the supper. We highly recommend the experience.

Laura and her family were an absolute joy to spend an evening with. We had so much fun learning how to make 3 types of pasta, and Laura was a true expert. It was also great getting to share a meal with her family, all of whom are warm, inviting people who are absolute pleasures to be around. We highly recommend this class and will definitely do it again if we ever are lucky enough to come back to Bologna. Don’t hesitate, book this class if she has availability.

This class was truly wonderful! Laura and her husband welcomed me with Italian kindness and hospitality. The program using three recipes was excellent, and I was able to learn a lot about making pasta. Laura taught her expertise in a practical, passionate, and very easy-to-understand way. Without a doubt, it was the highlight of my week-long stay in Bologna.

I love cooking risottos, tagliatelle with ragù, carbonara, seafood pastas, as well as meat and fish prepared in different ways, and of course gratin vegetables and various desserts. I’m originally from Veneto, so I can also make baccalà, sweet gnocchi, and other delicacies typical of my region. I also enjoy “borrowing” recipes from other parts of Italy, especially Milanese risotto.
