Cooking class: learn how to cook traditional & innovative Italian recipes from a local Cesarina
Shared Experience
Your experience
I am waiting for you for an authentic Bolognese experience among hills and tradition! After a welcome glass of wine, we will prepare together two types of fresh pasta pulled by hand with a rolling pin, as tradition dictates. The first is green puff pastry, which we will stuff with a delicious filling of mortadella, ricotta and Parmigiano to create the typical Balanzoni. The second is yellow egg pasta sheet, with which we will make classic tortelloni filled with ricotta and spinach. Once ready, we will bake them and enjoy them together with selected local wines in my home nestled in the green hills of Bologna. Who wants to learn the Bolognese tradition?
We‘ve had a really great time with Roberta. She not only showed us how to make great Tortelloni and Tagliatelle but also how to prepare a yummy tomato-meat-sauce. The wine was also delicious and her place is beautiful. Thanks for the wonderful morning and afternoon!

Thank you Roberta for welcoming us into your home and sharing your wonderful pasta making skills. We had a lovely night and walked away with confidence in recreating a beautiful, authentic Bologna meal. A perfect way to spend the evening in Bologna. Grazia.

We had such a fun time learning how to make Tiramisu and pasta. Hopefully we can recreate what we learned once back in the states.

Roberta has so much charm, knowledge and sophistication that simply spending time with her was a pleasure! The fact we cooked together and had a fantastic dinner afterwards was a bonus. The best experience to do in Bologna!

I can’t say enough wonderful things about our this experience. It was truly the highlight of our trip. Roberta was so warm and welcoming. We got to choose the type of pasta we wanted to learn how to make and we learned her mother’s recipe for tiramisu. She even placed a candle in the tiramisu to celebrate my son’s birthday. One of my favorite pics is when she gave a kiss to his head. We really felt like we were in Nona’s kitchen. We had so much fun learning all the details of making, kneading, and rolling out the pasta. We also enjoyed delicious wine and espresso over conversations. The food, the company, the culture, the conversation, the whole experience is something we will forever remember. Roberta also shared the recipes with us so we can continue to enjoy this experience even after we arrive back home. 10/10 I would recommend this to anyone visiting Bologna. My son and I have not stopped talking about this all day!

I love my kitchen both as a space and as a working environment. I enjoy getting my hands in the dough to make pasta, including thin sheets and shortcrust pastry. Being Tuscan, my cuisine is a blend of Tuscan and Emiliana traditions. From the typical lasagna and tagliatelle to the classic Tuscan pappa al pomodoro, my kitchen represents a fusion of these regional influences. The journey through traditional flavors continues with favorites like tiramisu and the iconic Prato biscuits, perfect for dipping into Vin Santo. My kitchen reflects my passion for tradition and the joy of sharing these gastronomic pleasures with others.
