- I am visiting Italy for the first time and barely speak Italian. Even so, Rosa was extremely welcoming and made me feel at home. She helped me learn different pasta shapes and fillings in a constructive way. In the end, the pasta was amazing and this class was the highlight of the trip. If you are looking for a homely meal with an extremely kind person to guide your lesson, Rosa is the person for you.
- My son and I did a pasta and Tiramisu class with Rosa. She was a wonderful teacher and we had so much fun. She was very friendly, knowledgeable, and patient. I highly recommend this activity.
- Really authentic cooking class with a very friendly host! Rosa made us feel at home and made sure that we didn't leave hungry. We also really appreciated thst she only spoke Italian with us even though our Italian wasn't perfect. We would definitely book this course again!
- We had a wonderful time cooking at Rosa’s. My friend and I learned how to make three kinds of pasta, and Rosa walked us through every step. She is so warm and helpful, a terrific teacher and host. Her kitchen was large and well equipped. While the pasta “rested” before being rolled out, she opened wine and made us a snack of mini pizzas. Delightful! Our final results were delicious as well. Tagliatelle with ragu, tortoloni with ricotta and parsley, and small button pasta filled with shrimp. Delicious and fun! I suggest having your class early in your trip, as Rosa has lots of great restaurants and sites to recommend. The class with her was really special.
- My wife and I, along with another couple, recently traveled to Bologna, Italy — a city full of beauty, culture, and history. It was a wonderful change of pace from the larger Italian cities. While there, we wanted to take a cooking class to learn how to make different kinds of pasta. After some research, we found the Cesarine experiences, and one in particular caught my eye — a class taught by Rosa, focused entirely on making several traditional pastas from scratch. Her lovely home was just a short walk from our place near Piazza Maggiore. From the moment she welcomed us in, we felt completely at home. Meeting Rosa turned out to be one of the highlights of our trip — she’s so warm and personable that by the end, we all considered her a friend. As she prepared the kitchen, Rosa opened a bottle of wine, and we started by making flatbread pies to snack on while she explained the pasta varieties we’d each be creating. No mixers, no shortcuts — everything by hand. I won’t go into every detail, but we were incredibly proud of how beautifully our pastas turned out: fresh, light, and full of flavor. Now that we’ve been home for a couple of weeks, I wanted to wait before writing this review — just to see how we’d do on our own. This time, I left the KitchenAid in the cabinet and followed Rosa’s simple, hands-on techniques. The result was far better than any of my previous attempts! Rosa made everything approachable, even the more intricate recipes with herbs and cheeses for stuffing. Thanks to her, we now truly know how to make several types of homemade pasta — a skill we’ll enjoy for years to come. This experience was absolutely worth the time and money — and meeting Rosa was the icing on the cake. She’s a wonderful teacher and an even more wonderful person!
